Chef José’s passion for cooking began in his childhood kitchen, inspired by watching
his mother transform simple ingredients into something joyful and alive. As Peruvian
gastronomy entered a new era in the 1990s under culinary pioneer Gastón Acurio,
José felt called to pursue the craft professionally. His culinary journey led him to train
under renowned Chef Roger Arakaki, where he refined Japanese techniques that
would later shape his approach to precision and balance.
After gaining experience in respected restaurants across Peru, José was
recommended to bring his talent to Dubai, where he continues to share the depth,
vibrancy, and warmth of Peruvian cuisine. At IKKA, he blends high-end technique with
locally sourced ingredients to create dishes that honour Peru’s traditions while
embracing subtle fusion.
For José, IKKA is more than a restaurant. It is home. His signature dish, the classic
Peruvian ceviche, reflects the essence of his culinary philosophy: fresh, bright,
balanced, and deeply connected to heritage. Guided by his background in textile
design and the influence of visual art, each plate is crafted with attention to form,
colour, and storytelling.
