Jose Luis’ culinary journey began under the guidance of his mother, where simple ingredientsv became joyful creations. Inspired by the renaissance of Peruvian gastronomy in the 1990s, he pursued his craft professionally, training with renowned Chef Roger Arakaki and mastering Japanese techniques that sharpened his precision and balance.
After honing his skills in top restaurants across Peru, his talent brought him to Dubai, where he blends high-end technique with locally sourced ingredients. A trained artist and painter, he brings the same creativity and attention to form, colour, and composition to every plate. At IKKA, each dish honours Peruvian tradition while embracing subtle fusion, telling a story through flavour and artistry.
